Spaghetti Aglio Olio Peperoncino

Only 5 ingredients needed:
Spaghetti, Cloves of Garlic, Dried or Fresh Red Chiles, Extra Virgin Olive Oil, Parmesan Cheese
Secrets for delicious spaghetti are to have a large pot to boil the water, the larger the better, the water needs to be tastefully salted (every Italian cook tastes the hot water to know that it has the right salty flavor).
To prepare the sauce: mince garlic cloves to your taste (I use at least 2 big cloves per person), mix with the chiles in extra virgin olive oil enough to cover the ingredients and cook until the garlic is golden but be careful not to burn it as the taste will turn unpleasantly bitter. 
The water needs to fully boil before you put in the spaghetti and cook the pasta al dente. Drain and for extra flavor add immediately some freshly grated parmesan (never buy already grated), stir then add the sauce and some fresh extra virgin olive oil to coat lusciously the pasta and of course extra Parmigiano Reggiano. 
In Italy, we tend to grate Parmesan on everything and Parmesan boosts your immune system!
